Despite creating their own novel recipes, Brooklyn-based company Call Me Caramel realize the importance of tradition when sourcing their cheese. They collaborated with Swiss cheesemakers Le Gruyère, who earned the AOP title for their namesake cheese. Standing for Appellation d’origine Contrôlée (controlled designation of origin), the title denotes government sponsored name protection and a strict adherence to traditional recipes. Meshed with cream, caramelized sugar and flake sea salt, these Gruyère caramels are a tantalizing mix of sweet and savory, perfect for pairing with juicy fruits, dark beers and chocolates, red wines, and coffee.
