Tomme de Fayette is a classic recipe and version of a traditional tomme. It is a grassy and complex cheese with soft overtones and a decadent texture. The wheel itself weighs roughly eight pounds and is 8 inches across the top. The cheese is allowed to naturally age, with the rind going from slightly mold covered to speckled and semi-firm allowing the cheese to boast fruity and grassy flavors with slightly citrus notes and a long finish. Being savory, Tomme de Fayette pairs well with meat as well as vegetables. This cheese brings a deliciously fatty yet dense composition to each bite and is a welcome addition to any cheese board.
Leslie Jacobs and Matthew Brichford have lived on the Brichford family farm since 1981. They have built their married life together on the farm, raising three daughters who have spent their summers milking cows and chasing the other animals (and their sisters) around the fields. They are proud to be an active part of our local community, celebrating their rich family history in the area which dates back to 1819. Today, Matthew manages the farm and makes the cheese. Leslie and daughter Maize help with the cheese marketing. Daughter Miah is in charge of milking and helps with grazing management. Welsh Corgi Mirk is an active worker on the farm, running alongside the cows encouragingly.
