Rush Creek Reserve is their Vacherin Mont d’Or style, available only in the late fall and winter. It’s made with the richer, thicker raw milk that their cows produce as their diet changes from grass to hay. Bound with spruce bark, washed in brine, and aged for 60 days, Rush Creek Reserve is one of winter’s best offerings.
