Serving Roomano Pradera
This hearty aged cheese can stand up to most bold flavors. Try with rich ales and lagers or full bodied reds. Or change it up with a dry or sweet sherry or bourbon. Aged goudas like Roomano Pradera pair perfectly with tart apple slices, dried fruit, and toasted or fried nuts. Just think of those marcona almonds!
How Roomano Pradera is Made
This distinctive cheese begins with pasteurized cow’s milk aged up to 4 years. Roomano’s intense flavor of sweet-salty butterscotch and granite paste is dotted with white flecks – calcium lactate crystals that form during extended aging – giving an assertive crunch. You’ll need a heavy knife (and perhaps some protective goggles) to breach this rewarding fortress of cheese.
