From the island of Sardinia, Italy, comes this exceptional aged goat cheese. Unlike most Sardinian cheeses, which are made with sheep’s milk, this cheese is made from the milk of Capra Sarda goats. It has the firm texture of a young Manchego but tastes like a mixture of lemons and butter. Refreshing and surprisingly light. The recipe is similar to the one used for Fiore Sardo. The resulting cheese has a thin pale yellow rind and a paste that is ivory in color with a smooth and firm to dry texture. With a herbaceous aroma that develops into a more caramel-like scent, flavors are sweet and floral with notes of citrus, spruce and a bit of salt. Pantaleo has flavors of herbs with hints of lemon and lime in the finish.
Aged a minimum of 100 days, the cheese has a firm, almost dry paste that makes it perfect for shaving over salads. Its unique flavors also make it a nice addition to a cheese plate, alongside a glass of unoaked Chardonnay or a dry sherry. this cheese has beautiful herbal and white pepper flavors. We love this cheese shaved over warm vegetables or paired with a drizzling of light honey.
