Coolea is an award-winning Irish gouda handmade on a family farm in County Cork, Ireland. Aged for about a year before it is shipped out, this farmstead cheese has a firm but brittle texture and is filled with protein crystals. It has a caramelly and nutty flavor that deepens over time, and will win over anyone’s palate. The flavours are sweet and rich with hints of hazelnut, butterscotch and honey. Serve as part of a well rounded cheeseboard with a selection of nuts and dried fruit like apricots and figs. Bold reds and full white accentuate the rounded flavor as well as the deep hints of caramel.
How Coolea is Made
When Dick and Helene Willems relocated from Holland to County Cork, Ireland in the late 1970s they never realized that their hobby of making Coolea would turn into a business a full fledged business by 1986. Keeping it in the family, in 1998 their son Dick junior took over the cheesemaking. The cheese made from their local milk is great for maturing longer and has a more interesting and intense flavor. The Coolea is then selected and matures in London until anywhere between eighteen months and two years old and its flavor most closely resembles caramel.
