In 2003, Cabot, the American block-cheddar giant, approached the guys at Jasper Hill to collaborate on a clothbound, English-style cheddar. The result is one of the finest American cheddars in history! Bandaged with muslin, rubbed down with lard, and aged a minimum of 10 months, this cheese is sweet and nutty rather than grassy, a strong reflection of the sweet grasses and feed the dairy cows are eating.
