Brebirousse d’Argental’s Taste
Brebirousse is a rare soft sheep cheese. Don’t let the red crust fool you – this is not a washed rind (it’s actually just sprinkled with annato for coloring), but the flavor is still full and funky. The first thought when this one hits your tongue is cream cheese. It has a thick, gummy texture and a rich backbone balanced by lactic tang. Wait one second and the flavor will develop into an hearty, gamey punch. Ooey-gooey as only the best (slightly) Stinky cheeses can be and sure to please any crowd. Luscious and silky enough for brie-lovers but don’t be fooled, this sheep cheese is full-flavored enough for the most adventurous palate. Just try to bright ignore this bright orange rind refuses to be ignored, but its delicate sweetness balances the buttery intensity. Brebirousse (or red sheep) cheese dreams of growing up to become: savory, creamy, nutty and complex.
Serving Brebirousse d’Argental
Play up savory notes with thick slices of ham on crusty baguette, tease out the milky sweetness with dried apricots, or enhance the intensity with a dollop of earthy chestnut honey, alongside a glass of bubbly cava.
How Brebirousse d’Argental is Made
Made in Lyon, France, of 100% pasteurized sheep milk which is luscious, richer and creamier than cow’s milk. The barely washed rind is tinted with Annato and smells strong but finishes oh so smooth!
